Slow Cooker Chicken Breast
Don't want to dirty up the kitchen, or spend forever preparing a single meal? This recipe is super easy, delicious, and freezes well!
When I first made this, I wanted something to be ready for dinner on the weekend after I knew we'd be out of the house. I anticipated not wanting to make dinner in advance, so I pulled out my trusty crockpot to make yummy tacos!
I also understand that most people are visiting to just get the recipe, so I'll cut right to the chase.
Juicy Slow-Cooker Chicken Breast
Prep: 10 mins Cook: 6 hrs Servings: 4
Ingredients:
- 1 pound boneless, skinless chicken breasts
- 1 (10 oz) can diced tomatoes & green chilies (Rotel)
- 1/4 onion, chopped
- 1 teaspoon southwest spice blend (Mrs. Dash)
- 1 clove garlic, minced
Directions:
- Arrange chicken in a slow cooker. Pour tomatoes over chicken. Add onion, southwest spice blend and garlic.
- Cook on Low for 6 to 8 hours. Chicken internal temperature should be 165 degrees.
Tips:
To make cleanup easier, try adding a liner to the slow cooker before adding ingredients.
This makes the base for delicious chicken tacos. After the chicken is fully cooked, shred using two forks. Taco accoutrements include: taco shells, cheese, sour cream, lettuce, etc.
